A simple recipe that is very adaptable based on whatever you have in the fridge as almost everything can be substituted for something else. Total cooking time should be about 25 minutes.
About 10 small roasting Potatoes, washed and cut into small chunks
Herbs of your choice (chives and thyme work well)
Breakfast meat of choice (I used salami)
Handful of arugula
Broccoli florets, cut into small pieces
Salt and pepper to taste
Tablespoon of olive oil
Put the potatoes in a microwave safe bowl and put them in the microwave for 10 minutes to soften them. Halfway, take them out and mix them up before putting them back in to finish.
Heat a pan to medium-high heat with olive oil. Once heated, add the softened potatoes, broccoli, herbs, salt and pepper and cook until the potatoes start to look a little crispy on the outside (about 10 minutes). Stir a few times so nothing sticks to the pan and burns.
While the potatoes are cooking, heat up a separate pan with butter and cook two eggs however you like them.
When the potatoes are almost done, mix in the meat and arugula and cook for another 3-4 minutes.
Take the potato mix off the stove and put into a bowl. Top with the eggs.
