Warm Spinach Salad - Kate Pennyfather

Ingredients:
  • Baby spinach (one package)
  • ⅓  cup olive oil
  • ⅓  cup red wine vinegar
  • Half of a red onion thinly sliced (more if you really like onions)
  • Pitted black olives 
  • Feta cheese

Instructions:
  1. Put spinach, desired amount of feta, and olives in salad bowl
  2. Put oil, vinegar, and red onions in a pan on medium heat (not too hot, you don’t want to fry the onions, just warm them)
  3. Leave ingredients in pan until onions are warmed through and limp
  4. Pour oil, vinegar and onions over the salad and toss!
