Banana Bread - Sarah Nagy

Makes 1 small loaf (12 slices)
 
Ingredients:
  • 1 Cup Mashed Very Ripe Bananas (2 medium)
  • 1 tsp Baking Sode
  • ½ Cup Low-Fat Yogurt
  • ¼ Cup Vegetable Oil
  • ¾ Cup Brown Sugar
  • 1 Egg or 3 Egg Whites
  • 1 Tsp Vanilla
  • 1 Cup All Purpose Flour
  • ½ Cup Whole Wheat Flour
  • 1 Tsp Baking Powder
  • Pinch of Salt

Instructions:
  1. In a small bowl, combine bananas, baking soda, and yogurt. Allow to rest.
  2. In a separate bowl, combine oil, sugar, egg, and vanilla. Blend together well.
  3. In a larger bowl, combine all-purpose flour, whole wheat flour, baking powder, and salt. Mix together well.
  4. Combine banana mixture with oil mixture. Add to dry ingredients in a large bowl and stir together just until moistened.
  5. Spoon batter into non-stick lightly oiled or parchment paper-lined 8 x 4-inch loaf pan. Bake in Preheated 350 F oven for 50-60 minutes or until loaf springs back when gently touched
 
Notes:
  • You also can add a handful of chopped walnuts.
  • Here’s a delicious lower-fat quickbread that can also be made as muffins. Spoon the batter into 12 muffin cups and bake for about 20 minutes.
  • You can use only whole wheat flour or only all-purpose flour in this recipe, but I prefer a mix of the two.
